I think your mom(my sister!) is so right. When you and your cousins were young Kraft dinner, deli ham and carrot sticks was our "go to" menu so we could enjoy an adult meal!

I really think it is a good idea to do a major shop once a week. Then take a few minutes to make meatballs, hamburgs etc.

Also cook something good on Sunday so there are leftovers for Monday.

Good luck!!

Good luck Erin! Love your mom's advice. I am not great about meal planning. I have tried so many methods but just can't stick to it. So I will add on piece of advice that I use instead of planning (though it also can complement it if you are good at meal planning). Find some tried and true meals everyone likes and make them frequently. Most American home cooks these days feel enormous pressure to make something new all the time but most home eaters (aka kids and husbands) prefer to eat repeats of their favorites. For us that means spaghetti with meat sauce (and a salad if I'm feeling up to more chopping), stir frys, and tacos show up fairly often. Then there are some meals rob and I like but the kids don't so much. I make those less frequently and try to throw in some garlic noodles so they have something they like. And there are other times that I make something (gasp) I want to eat and say f@(k it to those bastards around the table. Lol. Actually usually those meals are ones the kids like but rob doesn't so he sets a bad example and eats cereal. Every now and then I make something new to spice things up. Some days those things are winners and get put into the rotation. Other days they are never to be spoken of again. But I do think having family favorites that are fairly simple makes life so much easier. You end up buying those ingredients every week and can make those dishes almost on auto pilot after a while.
